MEET OUR FARM & FAMILY
Elk River Wagyu is a 250 acre farm bordered by the Elk River near Dellrose, TN, just south of Nashville and Franklin, TN. Our farm was purchased in 1995 by father, Ed Sims, a former Army Ranger and West Point Graduate and Co-Operated by son, John Sims, a former Army Medic. The farm is laid out in such a way allowing the herd to roam from pasture to pasture and into and out of the barn living a relatively stress-free life. Protecting the animals and ourselves in every interaction is our first concern. We take serious our charge to be good stewards.
Our herd is never confined, allowed to roam and feed on pastures that have a mixture of local forages. In addition, we provide an all-natural high protein & fiber feed mixture. This great care leads to the most tender Wagyu beef with superior marbling and a buttery smooth taste.
Our full-blood Wagyu cattle are sired by our registered Tajima Wagyu Bull, or as we affectionally call him around the farm, “Wully Bully.” This means all our exquisite tasting Wagyu beef is of the highest quality for taste and marbling. We only process our cattle when they are at the optimal age for tenderness and marbling.
Our beef is No Growth Hormones, No Antibiotics, and has No Animal Byproducts.
